How Often You Actually Need to Calibrate Your Probe (It’s Not Monthly)
The new 2025 FSA guidance moved away from “calibrate monthly” to “calibrate based on risk and usage”.
For a normal café or food-truck probe used 10–20 times a day: every 3 months is now perfectly acceptable, as long as you do the ice-water test and log it each time.
Daily accuracy check (ice water, no adjustment needed) is still recommended, but full calibration with adjustment only when it’s more than ±0.5 °C out.
Result: you waste less time, the probe lasts longer, and you’re still 100 % compliant. EHOs have accepted this at every inspection since the change.
