It always happens at the worst possible time.

Step 1 — Don’t panic. You have four hours from when the temperature goes above 8 °C before food becomes unsafe (two hours if it was already marginal).

Step 2 — Immediately move everything to your backup chill space (the spare fridge, the walk-in at the pub next door you have an agreement with, or even sealed cool boxes with ice packs).

Step 3 — Log three things in the app right now: time the fridge failed, exact temperature when discovered, and exactly what you did with the stock + where it went.

Step 4 — Call the engineer (most 24-hour firms will come out same night for commercial units).

Step 5 — When the fridge is fixed, log the repair time and new temperature.

Show that chain of events to an EHO and you will not lose a single point. We’ve seen it dozens of times. No log = automatic major non-compliance and potential prosecution.
